Serves 4 as a main dish

Ingredients for the cauliflower rice
1 tbsp olive oil
1 cauliflower
½ large red onion finely chopped
2 cloves garlic finely chopped
Sea salt
2 limes juiced
1 tsp chili powder
1 tsp ground cumin
½ bunch chopped coriander

Ingredients for the beans
420g can of black or pinto beans
½ tsp ground cumin
½ tsp ground coriander
Salt and pepper
2 red chillies finely chopped
1 oven roasted red pepper, deseeded and skinned, finely sliced

Ingredients for the tomato salsa
4 ripe plum tomatoes or vine tomatoes, deseeded and chopped
½ large red onion finely chopped
2tbsp finely chopped coriander
¼ fresh red chilli chopped finely
1 clove garlic finely chopped

Ingredients for the guacamole
2 ripe avocados
1 clove garlic finely chopped
1 red chilli finely chopped
6 ripe cherry tomatoes finely chopped
½ bunch coriander chopped
2 limes juiced
Olive oil
Salt and pepper

Method for making the cauliflower rice
In a food processor using the grater disc, feed the cauliflower florets into the feeder, this will give a good fine grain like texture to the cauliflower.

In a large frying pan heat up the olive oil and add the garlic and red onion and gently fry until they become caramelised and golden brown, this adds flavour to the finished ‘rice’

Once the onions are cooked add in the cauliflower, you may not need all of it, you can keep the remainder and either freeze for later use or keep in the fridge for few days.

Cook the cauliflower for about 4mins, keep it moving around the pan by stirring it gently, now season with salt and pepper, remove from the heat and allow to cool slightly. Once cooled add the lime juice, cumin and chili powder. Taste and adjust to your own taste

Method for making the beans
Heat up the frying pan and add the tin of beans including the liquid they come in. Add the chilli, cumin and ground coriander and allow it to come to a gentle boil, cook for about 5 mins, season and taste and then set aside to cool

Method for making the tomato salsa
In medium bowl combine all the ingredients together and then season to taste, add more chilli if you like a bit more heat. Set aside to use when the dish needs to be assembled

Method for making the guacamole
In a medium bowl mash the avocados if they are ripe you can do this with a fork. Otherwise use a stick blender.

Into the mashed avocado add all the other ingredients, adjust the seasoning and set aside

Now assemble all the separate components, using a Kilner jar if you have one or a wide pasta bowl if not. Place the cauliflower rice in the base, add the beans and top with the guacamole and salsa. You can top with sour cream and grated Jack cheese.
