This recipe is sweetened with honey and uses no butter as the avocado provides plenty of natural oil and keeps the cake moist
680g plain flour
3tsp baking powder
½ tsp bicarbonate of soda
¼ tsp salt
2 large free range eggs
3 ripe bananas, mashed
1 ripe avocado, mashed
1 tsp vanilla extract
Preheat the oven to 180°C fan
Grease and flour a 2lb loaf tin
Place the flour, baking powder, bicarbonate of soda and salt in a large bowl and stir to combine
Mix the eggs, banana, avocado, honey and vanilla together in a separate bowl
Add the banana avocado mixt to the dry ingredients and stir until combined
Pour the mixture into the loaf tin and bake in the oven for about 45 minutes or until the top is golden brown and a skewer inserted into the centre comes out clean. If the loaf is browning too fast, lightly cover with foil for the remainder of the cooking time.
Cool in the tin for 10 minutes, then ease it out of the tin on to a wire rack and cool completely.
